Chocolate Haystacks
After 8 years in Weight Watchers I finally tried these and they are very yummy! If you have a craving or urge for chocolate this will satisfy as well as giving you a dose of your daily fiber requirement.
1/2 c. good dark chocolate chips or semi-sweet or milk chocolate chips if for the kids
2 cups of Fiber One or AllBran Cereal
In a small microwave container, melt the chocolate chips in a microwave. (I melt them in 30 second increments, stirring each time, until chips are smooth consistency, like butter) or you can use a double boiler melting method on the stovetop) Place fiber one cereal in a large mixing bowl, and pour melted chocolate over the cereal. Stir mixture until cereal is well coated. On a wax lined cookie sheet, scoop cereal mixture out with a small cookie or ice cream scoop, place an each scoop an inch apart. Place cookie sheet in the fridge for 20 minutes, or allow to cool on countertop(about an hour) Until chocolate is set. Eat and enjoy.
Makes 16 cookies - 1 pt each.
